When I am making a recipe I always try to consider everyone. I can’t always serve everyone but this is one of those recipes where I was able to serve the vegan community.

Wait, are sour patch kids vegan? How can that be possible? Well, the answer is yes because they use pectin instead of gelatin.

Sour patch kids are one of my favorite candies. If you have never had them, they are essentially a sour gummy recipe.

They started out with the original flavors of orange, lime, lemon, and “Red Berry” which is just raspberry.

Then later they introduced watermelon and blue raspberry. I will only be making the the lemon, orange and watermelon today but I included down below how to make the others.

What Is Pectin?

Pectin is a coagulant that is naturally found in fruits like apples.

Now a days, this chemical has been extracted and packaged for store bought use.

Are Sour Patch Kids Vegan? – Gelatin V.S Agar Agar

My recreation of this recipe has a bit of gelatin which is not vegan but you can add agar agar instead that is vegan because it is made for algae. Agar agar is more potent than gelatin though so for every 1 teaspoon of agar agar, you will add 8 teaspoons gelatin. So in the recipe I use it calls for 1 tablespoon of gelatin so if you are using agar agar you would use .625 grams.

Sour Patch Kids Lime and Lemon Vs Watermelon, Orange, and Raspberry

I broke this recipe up into 2 basic recipes.

However, the only difference is that the recipe for the lemon and lime sour patch kids has 2 more TBSP of sugar because the lime and lemon juices are already sour. So I added more sugar to counteract that.

We don’t want the candy to be sour at all because we are going to be adding a sour coating to them once they are done.

We don’t want to overdue it.

Sour Gummy Recipe Mold

When I came up with the idea to make this sour gummy recipe, I really wanted them to look the part.

So I looked online for a sour patch kids mold and…… couldn’t find one. But what I could find was a way to make my own.

All you do is knead 2 different puddies together, roll it out, press in your store bought sour patch kids and let that cure for 1 hour before taking them out. Here it is if you would like to try it for yourself.

These Are Unfortunately Not Shelf Stable

Unlike the store bought version, these are NOT shelf stable. They turn very soft, rather quickly so they need to be stored in the refrigerator and they will keep for about a week. I will be releasing a better, more self stable version soon.

Ingredients

Lemon + Lime Sour Patch Kids

All other flavors (Raspberry, Blue Raspberry, Orange, Watermelon)

  • 4 Tbsp of fresh fruit juice
  • 3 Tbsp of Pectin
  • 3 Tbsp of Granulated Sugar
  • 1 Tbsp of Water
  • 2 Tbsp of cold water + 1 Tbsp of Unflavored Geliton

Sour Coating

Instructions

  1. Bloom the geliton by combining the unflavored geliton powder and 2 Tbsp's of water. Stir to combine and leave to bloom for 5 minutes.
  2. In a small sauce pot add the fresh fruit juice and sugar over medium low heat. Stir occasionally and bring to a simmer.
  3. When the mixture is at a simmer, add the pectin, stir to combine and bring to a boil.
  4. When the mixture comes to a gentle boil add in the bloomed geliton and stir to dissolve.
  5. Cook until thickened. Shut off.
  6. Use a syringe to squeeze the solution into the molds.
  7. Transfer the molds to the fridge to set for 2-3 hours.
  8. Remove the candies from the molds and leave them in the fridge overnight UNCOVERED. This will dehydrate them and give them a firmer chew. You can use this time to make a differant flavor of sour patch kid if you would like.
  9. In a small bowl, combine 1/2 Cup of granulated sugar and 1 Tbsp of citric acid.
  10. Toss the candies around in this mixture and shake off the excess. Once all of your csndies are coated they are ready to enjoy. These can be left uncovered in the fridge. If they are covered, they will get soggy.

Notes

To get any fresh fruit juice that is not squeezed i.e. raspberry, watermelon, or cherry, just blend the fruit in a blender and strain it through a sieve to get out the pulp and seeds.
